Weekend dessert idea: “Snow-noodles” – Austrian classic dessert transformed into Protocol diet friendly one, made of eggs, coconut milk, xylitol and vanilla.
6 eggwhites mixed with 1 tbs xylitol until stiff peaks form. Boil a water in a pot, warm a spoon in water, than add two to three spoons of egg white snow into the boiling water, and as you put them in a pot, imidiately turn them on the other side. Take them out and put in a bowl. Repeat this until you cook all snow. Then heat the coconut milk (750 ml) with a vanilla been until it boils. In a pot mix 6 egg yolks with 5 tbs xylitol with a hand mixer and then carefully pour the milk into it constantly stirring. Turn the heat on and stirr it until it gets a little thicker, but not too long, because you will get scrambled eggs, sort of… Pour that vanilla milk over those snow noodles and refrigerate it. You can make all of that in a big bowl or you can make single portions in cups or smaller bowls.
